SAN ANTONIO, TX - Maverick Texas Brasserie has introduced four fall dishes and five seasonal cocktails, now available at its Southtown restaurant. With comforting flavors and unexpected combinations, the seasonal additions invite guests to settle in, try something new, and leave feeling well fed and well cared for.
The menu balances the comfort of familiar fall ingredients with Maverick’s French approach to cooking. Roasted Butternut Squash and Apple Bisque ($12), finished with toasted pistachios and black pepper crème fraîche, offers a warming start to the meal. Crispy Duck Confit ($39) brings together Maple Leaf Farms duck, creamy stone-ground Texas polenta, wilted spinach and blackberry gastrique, pairing a brasserie tradition with flavors that feel close to home.
For a classic brasserie entrée, the Steak Frites Bavette ($45) is served with hand-cut frites, sauce au poivre, oak-smoked sea salt and parsley. The Texas Pecan Trout Amandine ($29) puts a regional spin on the French classic, pairing pan-seared freshwater trout with toasted Texas pecans, jalapeño butter and charred haricots verts.

Five new seasonal cocktails bring the same sense of comfort and discovery to the bar. Paper Lantern combines bourbon, pumpkin, Montenegro and lemon with a five-spice sugar rim, while Listening Room layers Earl Grey vodka, acidulated apple cider, French apple brandy and fall spices. Both offer a taste of the season to enjoy while settling into an evening at Maverick.
Together, the additions offer guests a new reason to return to Maverick this fall, whether for a bowl of seasonal bisque, duck confit or a cocktail at the bar.
