Executive Chef Ed Ebert brings French technique and Texas flavors to a holiday feast featuring post oak-smoked prime rib, herb-roasted turkey and seasonal favorites.
SAN ANTONIO, TX - Maverick Texas Brasserie will host its first Thanksgiving buffet on Thursday, November 26, 2026, featuring traditional holiday dishes with French and Texas influences. The buffet costs $75 per adult and $35 for children ages 12 and under.
Executive Chef Ed Ebert brings decades of culinary experience to the holiday menu, pairing familiar Thanksgiving dishes with French preparations.
At the center of the feast is a carving station featuring post oak-smoked prime rib seasoned with herbs de Provence and cracked pepper, served with Cabernet jus and horseradish crème fraîche. Guests can also enjoy herb-roasted stuffed turkey accompanied by rich giblet velouté gravy and spiced orange-Espelette cranberry sauce.
The buffet also features a bouillabaisse-inspired seafood stew with seared Faroe Island salmon and Prince Edward Island mussels. Sides include roasted garlic pommes purées, brioche sage stuffing, sweet potato soufflé, green chile creamed spinach gratin and charred Brussels sprouts with hazelnuts, balsamic glaze and Gruyère. A salad station and charcuterie boards with local meats, cheeses, breads, nuts and fruit complete the savory offerings.
Thanksgiving is about bringing loved ones together around the table. We wanted to honor the dishes everyone looks forward to while bringing in the French techniques and wood-fired flavors that define Maverick. One of the entrees I’m most excited about is our Post Oak Smoked Prime Rib.
Ed Ebert, Executive Chef of Maverick Texas Brasserie
Desserts include profiteroles filled with vanilla bean pastry cream, miniature pots de crème, assorted dessert bars and pumpkin Basque cheesecake with vanilla-bourbon caramel.
